(I got the recipe originally from an old cook book, so measurements   are in ounces rather than grams) &#160; &#160;
 &#160; &#160;
8oz flour &#160; &#160;
4oz butter &#160; &#160;
6oz grated English Extra Mature cheddar cheese (or local  alternative) (I usually put 7oz in, to make them a bit more  cheesy)&#160;  &#160;
Yolk of two eggs &#160; &#160;
salt &#160; &#160;
pepper &#160; &#160;
 &#160; &#160;
 &#160; &#160;
Sift the flour into a bowl.&#160; Add a pinch of salt and pepper.

Rub the butter into the flour until it resembles fine breadcrumbs. &#160; &#160;
 &#160; &#160;
Add the cheese, and mix in. &#160; &#160;
 &#160; &#160;
Bind together into a stiff dough with 2 yolks and water. &#160; &#160;
 &#160; &#160;
Knead lightly then roll out to desired thickness (anything from 2-5   mm, depending on how delicate you want them) and cut into thin straws   about 5mm wide.&#160;  &#160;
 &#160; &#160;
Lay them out on a baking tray.&#160; &#160;
 &#160;
 Glaze with egg yolk (optional) &#160; &#160;
 &#160; &#160;
Cook for about 20 minutes (or until they are starting to brown) at   130 degrees. &#160; &#160;

 &#160; &#160;
That&#039;ll make one batch.&#160; I always make 2, as they are very   addictive and don&#039;t last long! ]]></description>
